With the right supplies, you can make your own pickles at home

    Clean Start

All supplies that you use must be very clean when you make pickles at home. A dirty jar or spoon can make all the pickles go bad.

    The Cucumber Is King

*Fill jars with freshly picked and firm cucumbers.

*Put a heated mixture of salt, vinegar, and spices into the jars.

*Seal the jars with clean lids. Allow the pickles to cool, and put the jars in the fridge. Write the date on the jars.

Leave your homemade pickles in the fridge. Pay attention to the date on the jars. If you haven't eaten the pickles after six months, throw them away.

You can also try other vegetables. Pickled carrots, cauliflower, and garlic cloves make delicious snacks and give salad some extra flavor.

    Tips

Kirby cucumbers are the classical pickling cucumbers-they hold up better than English cucumbers during pickling, remaining firm and crunchy instead of becoming overly soft. Persian cucumbers make very nice pickles, too-they have thinner skin and are the perfect size for packing into jars.

    1. (1) According to the passage, things used for pickling should be    .

      A . hot B . cool C . clean D . classical
    2. (2) Why do we have to write a date on the jar?

A . To check if the pickles are fresh. B . To help find the jar more easily. C . To help keep the jar in a tidy way. D . To remind us to put it in the fridge.
    3. (3) What kind of vegetables is good for pickling?

A . Thin-skinned in big size. B . Fresh and hard enough. C . Soft skin and freshly picked. D . Thick-skinned in small size.

During the day, we work hard like bees. But do you know our bodies are busy too while sleeping at night?

11:00 pm Better Lock the Doors

To find the most comfortable position, some people sleep on their backs or stomachs. Most people curl up and lie on the side like a baby. Others take more unusual positions, such as on elbows(手肘) and knees or completely covered in the sheets.

During the first few hours of the night, some behaviors can be caused by the disagreement between your brain and body. For example, the brains of sleepwalkers want to stay awake, while their bodies are in a deep sleep. So most sleepwalkers walk around and return to bed without waking up.

    4:00 am Dare to Dream

Your sweetest-or scariest-dreams usually happen in the last hours of sleep. If you awaken in the middle of a dream, you might find it difficult to move for a moment. Certain parts of your brain have shut down, stopping messages going to the muscles(肌肉) and disabling the body for a time.

Dreams may seem foolish, but some cultures believe they are real events happening to a person's soul during sleep. Others use their dreams to solve the problems of daily life. 7:00 am

Time to wake up, but wait, your arm can't feel anything. As you begin to move, an uncomfortable feeling floods" down from your shoulder. When pressure on your arm stops sending messages to the brain, your arm loses all feelings. As the pressure is reduced and messages sending restarts, uncomfortable feelings appear. So don't worry if you wake up and your arm is still "asleep". It'll be wide awake in a moment.

    1. (1) Which of the following is the sleeping position for most people?
      A . B . C . D .
    2. (2) The underlined "they" in Paragraph 5 refers to       .
      A . cultures B . dreams C . problems D . messages
    3. (3) People often find it hard to move when they just wake up because       .
A . their brains are still in deep sleep B . they dream in the last hours of sleep C . their brains fail to get messages D . walking in the sleep makes them tired
    4. (4) Which of the following can be put in the blank       .
      A . Get Comfortable B . I'm Falling Asleep C . Wake Up Immediately D . But My Arm Is Still Asleep

For thousands of years, humans have used yeast(酵母)for making bread and alcoholic drinks, such as beer. But scientists now are doing something different.

When you walk into Jef Boeke's lab, it smells like bread rising. But his team is not making homemade bread. Instead, they are changing the order of DNA in yeast cells. That's what we call synthetic(合成的)yeast. So far, the scientists have constructed and replaced six of yeast's 16 chromosomes(染色体). The new chromosomes have all worked well.

By making synthetic yeast, researchers could make different combinations used for different things. For example, one combination(化合物) may be better for making biofuel, and another for making medicine. These could then be made in large, industrial amounts. Synthetic yeast could also be used to make bioplastic material that, unlike plastic made from oil, would be biodegradable(可降解的). Using this material would help reduce pollution. Boeke says," The possible uses for yeast are limited (限制) only by one's imagination. They can be programmed through DNA writing to produce really an almost limitless types of products that can replace things which we nowadays make from oil or other sources and even some new materials that don't even exist today. "

So far, scientists have engineered yeast to produce bright colors. Red is easy to create. Orange and yellow are a little trickier. Purple is difficult. And as of yet, some colors can't be shown in yeast at all-green for example. Still, the yeast can make artwork, and in the future, may even be used to paint a house.

However, redesigning DNA worries some people. Laurie Zoloth is a bioethicist at Northwestern University. She said the work would worry people who think creating life would give humans power they should not have. Jef Boeke says his teams are not creating new life. All the experiments they do start with pre-existing living cells and they just introduced changed DNA into it. He and other scientists always look at the risks, especially when it comes to food safety. But least another year to complete his pioneering project.

    1. (1) In Boeke's lab, synthetic yeast is different from common yeast in        .
A . the smell of the yeast B . the color of DNA C . the order of DNA D . the shape of cells
    2. (2) What does the underlined sentence in the third probably mean?
A . Synthetic yeast will be able to be used widely in many areas. B . People think it's a good idea to use synthetic yeast in more places. C . Synthetic yeast has already been used to make biofuel and bioplastic. D . People expect to create new materials with the use of synthetic yeast.
    3. (3) Which of the following is TRUE according to the passage?
A . The use of synthetic yeast may cause some trouble. B . The purpose of Boeke's research is to create new life. C . All the colours can be produced by yeast except green. D . Yeast from Boeke's project has been used in the daily life.
    4. (4) What's Jef Boeke's possible attitude towards the use of synthetic yeast        .
A . Interested but scared. B . Confident but careful. C . Hopeless and worried. D . Sorry and disappointed.
